Anasazi Bean Filling

1 pound Anasazi beans, washed
1 onion, chopped
4 cloves garlic, minced
1 teaspoon fine sea salt
1-2 teaspoons Zip or cayenne, as you desire hotness
1 tablespoon olive oil
4 cups water, or to cover beans by 1 inch

Bring to a boil, reduce to simmer, and cook covered about 1 1/2 hours. Or, place all ingredients in pressure cooker. Bring to high pressure, maintain medium pressure, and cook for 25 minutes. Drain if necessary to make a filling suitable for your tamales, adding more spices and seasonings, diced cooked meat or whatever...
