1 egg
3 bananas (about 1 1/2 cups pulp)
1/4 cup olive oil
1 cup bran cereal
1 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon soda
1/2 teaspoon fine sea salt
1/3 cup sugar
2 tablespoons toasted amaranth or wheat germ
Preheat oven to 350 degrees. In batter bowl, whisk egg and then stir in
banana, oil, and bran. In another bowl whisk together the flour, baking
powder, soda, salt, and sugar. Add to first mixture and mix only enough
to dampen the flour. Fill muffin cups 3/4 full. Sprinkle with amaranth.
Bake 20-25 minutes.
