Classic Sourdough Bread

This one is dense as it uses no additional yeast. The starter has to be a good one, and you need to let it rise for 8 hours or more.

1 1/2 cups starter
3 3/4 cups bread flour
3/4 cup water
1 1/2 tablespoons sugar
1 1/2 teaspoons salt

In a medium glass bowl, combine the starter, half of the flour, and half of the water. Mix well. Cover and let set in a warm place for 8 hours or overnight. It should be full of bubbles. To make bread, place starter and remaining ingredients in bread machine and select the dough setting. When done, remove and shape into a loaf. Cover, and allow to rise for about 45 min. to 1 hour, or until doubled in bulk. It may take even longer. Bake at 375 degrees for 30-40 minutes. If you don't use a bread machine, simply follow the same instructions for making the sponge, and then hand knead the dough. Follow the bread making procedure on above recipe.
