Onion Biscuits

2-3 large onions
4 tablespoons olive oil
1/4 teaspoon coarse sea salt
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon fine sea salt
1/2 cup olive oil
1/2 cup milk or cold chicken broth

Peel and slice onions, and chop them up a little. Heat the oil in a large saute pan, and then add onions and cook on medium low for about 30 minutes. Sprinkle with salt and set aside. Preheat oven to 425 degrees. In batter bowl, whisk together the flour, baking powder, and salt. Measure the oil and milk or broth and add to the dry ingredients. Blend well. Pat or roll out into a rectangle about 12 by 18 inches in a flat baking pan. Cover with the onions. Bake for 25-30 minues, or until medium brown. Slide onto a wooden seving board and cut into squares. Serve warm.
