3 cups sifted or lifted all-purpose flour
1 tablespoon baking powder
zest of 1 orange
1/2 cup sugar
1/2 teaspoon fine sea salt
1 egg
1/4 cup orange juice
3/4 cup low-fat milk
2 tablespoons oil or melted butter
1 cup finely chopped walnuts, optional
Preheat oven to 350 degrees. In batter bowl, whisk the dry ingredients.
In another bowl, combine wet ingredients. Pour the liquid mixture into
the dry ones and mix with a few swift strokes, stirring until just
barely blended. Pour into two 8 by 4 inch loaf pans, or 1 large bundt
style cake pan, or equivalent. Bake 45-50 minutes.
