Apple Sage and Pecan Stuffing
enough for a 12-14 pound turkey

1/2 cup butter or light olive oil
2-3 cloves garlic, sliced
1 onion, chopped
2-3 ribs celery, chopped
1-2 apples, chopped
1 teaspoon fine sea salt
1/2 teaspoon freshly ground white pepper
1 teaspoon dried Italian seasoning, or chipotle, or curry, or..................
2 tablespoons dried sage leaves, or about 1/2 cup snipped fresh sage
1/2 cup or so of fresh pecans, or other nuts, as desired
8-10 cups bread cubes or dressing mix
1/2 to 1 cup turkey or chicken broth, or use part wine or vermouth

In large bowl, microwave butter, garlic, onion, and celery on high for 2-3 minutes. Blend in remaining ingredients, gently stirring in the bread cubes. Add only enough broth to make "snowballs" out of the mixture. Stuff into washed and seasoned turkey cavities. Make sure the dressing has reached an internal temperature of at least 165 degrees when you remove the turkey from the oven.
