Grilled Chicken Salad

1-2 half chicken breasts
2 teaspoons good quality mustard
fresh of dried herbs, such as basil, thyme, rosemary
pinch of salt and pepper
washed and dried salad greens
1/2 cup basic vinaigrette, or any good quality bottled salad dressing of your choice. Our peach vinaigrette is especially nice with this recipe.

Spread the chicken with the mustard, and sprinkle liberally with herbs. Preheat the microwave browning grill on high for 8-9 minutes, or preheat a stove-top grill or your outside grill. When hot, add about 1 teaspoon oil to the microwave grill and quickly place the chicken breast on the grill. Microwave on high for 3 minutes. Turn the chicken pieces over, and microwave another 1-2 minutes, or until the chicken is done. Cool slightly, and slice on an angle into strips. Place on a plate with the greens, and drizzle with your choice of dressing. Freshly grated Parmigiano-Reggiano cheese is great with this, too.
