Lemon Butter Chicken Breasts

4 half chicken breasts
paprika and pepper
1 lemon
2 tablespoons butter/margarine or olive oil
1 clove garlic, minced or pressed
2 tablespoons chopped parsley

Remove skin from chicken pieces; bone, if desired. Sprinkle chicken with paprika and pepper. Place chicken in shallow baking dish, arranging meatier portions to outside edges of dish and placing pieces about 1 inch apart. Cut lemon in half and squeeze juice over chicken breasts. Microwave, uncovered, on High 4-5 minutes. Turn chicken breasts over and microwave, uncovered, on High for an additional 3-5 minutes, until chicken tests done. Remove from microwave oven and allow to stand 3 to 4 minutes. Meanwhile, place butter, garlic and parsley in glass measuring cup. Microwave, uncovered, on High 1-2 minutes, until butter melts and garlic is soft. Pour butter sauce over chicken. Makes 4 servings.
