Simmered Chicken

Great to cook for dinner. Or, just cook it, let it cool and then dice it up for salads, sandwiches, or even casseroles and pot pies.

2-3 pounds chicken, whole or assorted parts
1-2 green onions
2-3 cloves garlic or several pieces of Just Dried Garlic
1/2 teaspoon fine sea salt
freshly ground peppercorns
paprika
pinches of dried herbs such as oregano, basil, thyme

Place about 2 inches water in lid of clay Schlemmertopf and allow to soak while you put the chicken, onions, garlic, salt, pepper, paprika and herbs in the bottom of the pot. Sprinkle liberally with paprika and any other herbs of choice. Drain the water from the lid and place over the chicken. Microwave on high 5 minutes, then on half power for 30-40 minutes or until chicken is done. Eat for dinner right now, or allow to cool enough to cut into pieces to use as desired.
