Chinese Salad with Crispy Won Tons

Double, riple, or quadruple this for a buffet

8 won ton wrappers
1 cup bite-sized cauliflower florets
1 cup broccoli, cut into bite-sized pieces
1/4 cup chopped fresh coriander
2 tablespoons finely sliced scallions
1/2 cup thinly sliced water chestnuts
1/4 cup toasted sesame seeds
1 small head romaine lettuce, torn into bite-sized pieces
2 teaspoons toasted sesame oil
3 tablespoons rice wine vinegar
1/4 teaspoon sea salt
1/4 teaspoon sugar
1 tablespoon soy sauce

Cut won ton wrappers in 1/4 inch strips and either deep fat fry or microwave until golden. In a bowl, place the cauliflower and broccoli and cover. Microwave on high 3 minutes. Rinse with cold water and cool. Combine vegetable, coriander, scallions, water chestnuts, sesame seeds, and romaine in a salad bowl. Mix sesame oil, vinegar, salt, sugar, and soy sauce together and pour over salad. Toss and garnish with the crispy won tons.
