Stir Fried Snow Peas and Carrots

2-3 fresh carrots, cut into strips
2 tablespoons peanut or other light oil (garlic infused is great!)
1 leek, thinly sliced
1 pound fresh snow peas, stem end trimmed
1/2 teaspoon toasted sesame oil
freshly ground peppercorns
1 teaspoon Tamari or soy sauce

Wash and scrub the carrots and cut into strips about 2 inches long by 1/4 inch or so. Place in batter bowl, cover with waxed paper and microwave on high 3 minutes. Set aside. In wok or stir fry pan, heat oil. Add leeks and stir fry 2-3 minutes. Add the carrot slivers and the snow peas. Stir and cook about 2 minutes. Add sesame oil, freshly ground pepper, and soy sauce to season. Heat thoroughly and serve.
