Vegetable and Tofu Stir-Fry

1 pkg. medium-firm tofu, drained and cut into cubes
1/4 cup light soy sauce
2 teaspoons rice vinegar, or other light vinegar
1 teaspoon brown sugar
1/4 to 1/2 teaspoon chipotle pepper, dried
fresh vegetables, such as onions, garlic, peppers, zucchini, potatoes, etc., all washed and cut into serving sized pieces
2 tablespoons peanut or olive oil

Marinate the tofu in the mixture of soy, vinegar, sugar, and pepper for at least 30 minutes. Prepare the vegetables. Preheat a wok or stir-fry pan, add some peanut oil and stir-fry the vegetables for at least 5 minutes, then add the tofu and fry several minutes more. Serve with rice.
