Apricot Chutney

2 1/2 to 3 pounds firm, ripe apricots
1/2 cup raisins
1/4 cup dates, chopped
1 cup white vinegar
2 tablespoons lime juice
1 lemon
1 1/2 cups sugar
2 tablespoons candied ginger, coarsely chopped
1/2 cup chopped walnuts

Cut apricots in half and remove pit. Cut out any blemishes and cut into smaller pieces. Add raisins, dates, vinegar, and lime juice. Quarter lemon, remove seeds, and slice very thin. Add to mixture and microwave on high for 5 minutes. Stir. Add sugar and stir. Microwave 5 min. on high, and then 5-8 minutes on medium power, or until mixture is thick. Add ginger and nuts and pour into hot, sterilized jars. Serve as a condiment with ham, lamb, fish, or grilled vegetables.
