3 eggs
1 1/4 cups sugar
1 teaspoon real vanilla
1/3 cup flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped walnuts
1 1/2 cups peeled and chopped apples
powdered sugar, for sprinkling
Whisk the eggs, sugar, and vanilla. Place the dry ingredients over the
top, and with a whisk blend them well before stirring them into the egg
mixture. Add walnuts and apples. Pour into a non-stick 9 by 13 inch pan,
or lightly butter if it is not non -stick. Bake in preheated 350 degree
oven 35-40 min. Cool in pan, and sprinkle with powdered sugar. Serve
every Labor Day even if you are not from Arkansas.
