Just Good Italian Pizza
  • 1 homemade or ready-made pizza crust
  • semolina or polenta
  • 1-2 cups fresh, red-ripe sliced tomatoes, or diced Pomi tomatoes
  • 1-2 tablespoons extra-virgin olive oil
  • fine or coarse sea salt
  • 6 garlic cloves, peeled and thinly sliced
  • about 20 very thin slices good quality salam
  • 1/4-1/2 pound good quality mozzarella cheese, sliced
  • 1 teaspoon snipped fresh oregano, or 1/2 teaspoon dried
  • 1/4 cup freshly grated Parmigiano-Reggiano cheese
  • 1/4 cup freshly grated Pecorino Romano cheese
  • fresh basil leaves, if available

Put the crust on a pizza peel which has been sprinkled liberally with the polenta or semolina. Heat oven to 500 degrees with the pizza stone in the oven. Place the tomatoes on the crust. If using Pomis, do not use too much of the liquid.

Sprinkle with oil, add remaining ingredients. Slip pizza onto the hot pizza stone and bake about 15 minutes.

Garnish with fresh basil leaves and serve.
