Mushroom and Sausage Topping
For pizza

 

2 tablespoons extra-virgin olive oil
2 cloves garlic, sliced
1 onion, sliced
1 pound mushrooms, sliced
1-2 lean smoked sausages (smoked chicken apple, Italian, etc...)
2 tablespoons freshly minced Italian parsley
2 tablespoons tomato paste
salt, if needed (depends on sausage)
pepper, if needed
1/2 cup or so grated mozzarella cheese
2-3 tablespoons grated Parmigiano-Reggiano
pizza dough
cornmeal

Place pizza stone in oven and preheat to 500 degrees.

Heat the oil in a wide frying pan and add garlic, onion, and mushrooms. Cook on medium heat, stirring occasionally, for about 15 minutes to brown the onions and mushrooms.

Add sliced or diced sausages, parsley, tomato paste, salt and pepper. Sprinkle pizza peel with a little cornmeal, and then shape the pizza crust and place over the cornmeal on the peel.

Spread the crust with the mushroom mixture, sprinkle with cheeses. Slip the assembled pizza onto the pizza stone, reduce heat to 400 degrees, and bake about 15-20 minutes, or until cheeses are browned and crust is done.
