A Snappy Sauce for Fish

1/4 cup extra-virgin olive oil
3 large onions, sliced
1/4 cup red wine vinegar or pomegranate juice
1/4 cup raisins
zest from 1 orange
zest from 1 lemon
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground pepper
4 fish fillets or steaks
1/4 cup toasted almonds

In saute pan, heat oil. Add onion slices and cook over medium heat 20-30 minutes until onions are limp and slightly browned. Add vinegar or juice, raisins, zests, salt, and pepper. Set aside. Bake, grill, or microwave the fish and arrange on a serving platter. Top with hot onion mixture and garnish with toasted almonds.
