Baked Sugar Pie Pumpkin / Winter Squash


2-4 small pumpkins or squash, so many varieties to choose from
1-2 tablespoons butter
pinch of fine sea salt
1-2 tablepoons maple syrup
orange zest from one orange
1-2 tablespoons orange juice

Preheat oven to 375 degrees. Very carefully slice the squash or pumpkin in half. Scoop out the seeds. Rub the inside with a bit of butter, salt, maple sugar, orange zest and juice. Place each half flesh side down on a baking sheet with sides. Bake for about 50 minutes, or until tender. Serve one half per person, or use the pulp for pies or whatever else strikes your fancy.
