Pumpkin Puree


1 sugar pie pumpkin
2-3 tablespoons butter
2-3 tablespoons maple syrup
salt and pepper, to taste
1-2 teaspoons good quality curry powder, if desired

Wash the pumpkin. Place in a microwave safe dish. Microwave on high 5 minutes. Allow to cool slightly, then cut the pumpkin open and remove the seeds and pulp. Cover both halves, and microwave on high about 5-8 minutes more, or until the pulp is tender. (This depends on how big the pumpkin was...the bigger, the longer!) Allow to cool enough to handle. Scrape the pulp into a serving bowl, add the butter, maple syrup, and seasonings. Reheat 1-2 minutes in the microwave just before serving.
