1 teaspoon sugar
1/2 teaspoon fine sea salt
zest of 1 lemon
2 tablespoons fresh lemon juice
1/4 cup extra virgin olive oil
2-3 zucchini, cut into 1/4 inch slices
chopped fresh mint leaves
In batter bowl or microwave safe serving bowl combine sugar, salt, zest,
juice, and oil. Microwave 30 seconds, whisk to dissolve the sugar. Toss
in the zucchini. Cover. Microwave on high 5 minutes, or until tender.
Snip on the mint leaves and serve. This is also wonderful chilled. The
mint is so refreshing.
