A wonderful Swiss meal to be enjoyed with good friends
little potatoes
little pickled corn
pickled onions
cornichons
hearty bread
authentic Raclette cheese
Cook the potatoes with their skins on. Arrange on trays that come with
the Raclette grill, or on heavy oven-proof plates. Add the corn, onions,
and pickles. Place a slice of the cheese over the top, and put under the
hot element to melt the cheese.
The cheese should melt over the other ingredients. Serve right away with
hearty bread.
Eat it while it is hot and melty, and it is not necessary to wait for
everyone to get served with this dish. You can also melt a hunk of this
cheese next to a fire, such as Heidi's grandfather did in the movie.
Then you simply scrape it off with a knife onto a plate and serve with
the same relishes. It is possible to do this under the broiler as well,
but watch out because the cheese gets melted very quickly and you do not
want to have it brown.
