Turkey Rollups

5 Matzahs
1 Large Onion, chopped
1/2 Cup Chopped Celery [optional]
1/2 Cup Shredded Cabbage [optional]
2 tbsp Oil
1 1/2 Cups Ground Cooked Turkey
3 Eggs, divided
2 tbsp Matzah Meal
To taste
Salt and Pepper, Garlic
Oil For Frying

Pass each matzah under running warm water and wrap in a damp towel
Let stand for 10 minutes
After 10 minutes if the matzah is not pliable -- sprinkle more water on it.

Sauté the onion and celery in the oil until tender crisp
Add the turkey and cabbage and cook for 10 minutes and remove from heat
Add 2 eggs and the matzah meal and season to taste with salt, pepper and galic

Lay out each piece of matzah and put 3 tablespoons full of the turkey mixture on the matzah.

Roll the matzah up carefully like an egg roll.

Dip each roll in the remaining beaten egg and fry in hot oil until golden-brown on both sides

Serve with mustard and catsup or sweet and sour sauce for dipping
