Artichokes in the Clay Pot


2-3 artichokes
a little water or broth
1 bay leaf
juice of one lemon
herbs, salt, and pepper, as desired

Soak the lid of the clay pot while you prepare the remaining ingredients. Wash the artichokes very well, and trim the tops and trim off the sharp points of each leaf. Place them upside down in the pot, and add about 2 tablespoons water and the seasonings. Drain the lid and place on top. Microwave on high, using 5 minutes per artichoke as a guide, or until a fork inserted into the bottom of each penetrates easily. Turn them over and let stand in the juices in the pot for several minutes before serving.
