Broccoli with Lemon Mayonnaise
1 bunch broccoli, washed and trimmed
1/3 cup mayonnasie
juice of 1/2 lemon
Wash the broccoli, and cut off about 1 inch of the tough ends. Using a
paring knife, trim back any hard or tough looking skin on each stalk.
Then slice, at an angle, into evenly shaped pieces. Put into a covered
microwave safe dish, such as Pyrex, a batter bowl, or "ugly pot". Cover.
Microwave on high, using 5 minutes per pound of broccoli as a guide.
(1bunch usually takes about 4-5 minutes, for instance) In meantime, mix
together the mayonnaise and the lemon juice. Put into a small serving
dish, and use as desired for a dressing or dipping sauce on the hot
broccoli.
