(Irish Mashed Potatoes)

3-4 peeled baking potatoes
1/2 to 3/4 cup chopped green onions, bulb and green stem
3/4 to 1 cup milk
butter, for serving, dotted on the top
salt and freshly ground black pepper

Scrub and cube the potatoes, placing them in "ugly pot". Cover. Microwave on high, using 5 minutes per pound of potatoes as your guide. In meantime, heat the onions with the milk in a glass measuring cup on high for 2 minutes. Mash the potatoes with the warm onion-milk, and beat in some butter. Season to taste with salt and pepper. Serve in individual bowls with a knob of butter melting in the center.
