Cheddar Cheese Soup in Pumpkin Shell
3 tablespoons butter/margarine
1/4 cup plus 2 tablespoons flour
2 cups chicken broth
1 cup milk
1 cup half and half
1/2 cup white wine
1 tablespoon finely chopped sweet red pepper
1 tablespoon finely chopped sweet green pepper
1/2 teaspoon golden Worcestershire
1/4 teaspoon white pepper
1/4 teaspoon hot sauce, or 1/4 teaspoon of "The Zip"
2 cups (8 oz.) shredded sharp Cheddar cheese
Combine butter and flour in 3 qt. casserole. Microwave 30 seconds. Whisk
in broth, milk, half and half, wine, peppers, Worcestershire, white
pepper, and hot sauce. Microwave on High 6 minutes. Whisk well.
Microwave another 6-8 minutes, or until thickened. Add cheese and stir
until melted. Serve immediately in hollowed out pumpkin shell.
