Creamed Caraway Cabbage


1 small head yellow cabbage
1 small red apple
2 tablespoons butter or oil
2 tablespoons flour
1/2 teaspoon fine sea salt
1/4 teaspoon white pepper
1/4 teaspoon caraway seeds
1 teaspoon dry mustard
1 1/4 cups milk
grated cheese for the top, if desired
Sweet Hungarian paprika for garnish

Shred cabbage and apple. Place in "Ugly pot." Cover. Microwave on high 8-9 minutes. Set aside. In batter bowl, combine butter, flour, salt, pepper, caraway seeds, and dry mustard. Microwave on high 30 seconds. Whisk in milk. Microwave on high 2 minutes. Whisk well. Microwave another 1 minute, as needed, to make a creamy sauce. Pour over cooked vegetable (drain any accumulated moisture from vegetable if needed). Garnish with cheese and paprika and serve.
