Delicate Parsley Sauce


2 tablespoons extra-virgin olive oil
3 tablespoons flour
1 cup good quality chicken, beef, or vegetable stock
1/2 cup low-fat milk
salt, if needed, but depends upon the broth
1/8 teaspoon freshly ground white pepper
1 1/2 cups finely chopped parsley
juice of 1/2 lemon
freshly grated Pecorino-Romano cheese

In batter bowl, combine oil, flour, vegetable broth, milk, salt, and pepper. Microwave on high 2 minutes. Whisk well. Microwave another 1 minute, to make a smooth sauce. Blend in the chopped parsley and lemon juice. Serve with feshly made pasta, with grated cheese if desired.
