Garbanzo and Red Bell Pepper Salad
1 1/2 cups cooked garbanzo beans
1 red bell pepper, finely diced
1 tomato, diced
2-3 green onions, slivered
2 tablespoons sour cream or buttermilk
1 tablespoon lemon juice
1 tablespoon wine vinegr
1 tablespoon olive oil
2-3 cloves garlic, minced
1/4 teaspoon fine sea salt
snipped fresh basil
tender leaf lettuce
salted peanuts, or other nuts or seeds
In bowl combine beans, pepper, tomato and onions. In glass measuring
cup, whisk sour cream, lemon juice, vinegar, olive oil and garlic to
make a creamy dressing. Pour over bean mixture and toss. Snip in basil
and arrange over lettuce leaves. Sprinkle with nuts as desired.
